  6. Ginger: 1 teaspoon (fresh)
  7. Cinnamon: half a teaspoon
  8. Cloves: half a teaspoon (crushed)
  9. Salt: 2 tsp

 

How to prepare a chicken biryani dish

  • Put ghee (or vegetable oil) in a saucepan until it melts with pepper, cardamom, cumin, turmeric and salt, and stir until we smell the aroma of the spices.
  • Ginger, garlic and onions are added with green pepper, with continuous stirring.
  • Put the chicken pieces with the spices, stir well, then add bay leaves with cinnamon sticks, tomatoes, yogurt, coriander and mint, while constantly stirring the chicken with the spices.
  • Add a cup of water and leave it for an hour on the fire until the chicken is well cooked, paying attention to keeping a little broth.
  • The rice is washed with water several times, and we put rose water with saffron, leaving it until it is returned to it.
  • Put a little ghee in a second pot and put the almonds and stir it until it becomes blond in color, and put it aside in a plate.
  • Put in a pot on the fire onions, cardamom and ginger with a cinnamon stick, stirring continuously for two minutes, until we have the smell.
  • Add the rice to the spices with continuous stirring, put 4 cups of water, and leave the rice on a strong fire until it boils, then reduce the fire under it.
  • Place the chicken pieces in order on the surface of the rice, making sure to put the broth and sauce on top of the chicken.
  • Leave it for an hour, then first remove the chicken pieces from the pot, then put the rice in a serving dish, placing the chicken pieces on top and decorate it with a sprinkle of an appropriate amount of almonds.
